Director of Food & Beverage
- Salary: €70+ DOE

- Essential Criteria: Must have previous F&B Management experience within luxury hotels
Daly Recruitment are on the market to appoint an experienced Director of F&B, for a leading luxury hotel based in the munster regions. The key responsibly of this position is to drive and lead the delivery of the Food & Beverage strategy across this stunning 5* hotel.
Reporting into the General Manager you will be responsible for all F&B departments and outlets along with the Conference & Events department. Ensuring the highest operational standards are delivered whilst providing client, guest, and team member satisfaction.
As Food & Beverage Director you will lead and manage the F&B operations with vision, motivation and commitment to deliver outstanding experience led service with excellent financial results whilst making strategic management decisions for the F&B operations in line with the hotel’s needs.
You will demonstrate positive leadership skills to cultivate and nurture an environment where the team is inspired to meet and exceed their objectives.
Key Responsibilities:
- With your strong commercial acumen, you will create an overarching F&B strategy to deliver the targeted metrics with outlet/departmental objectives and SMART goals, recognising departmental challenges, and solves undefined problems and workflows.
- You will be expected to prepare annual budgets and administer in a fiscally responsible manner. Focusing on F&B revenue growth and profitability, producing monthly rolling Food & Beverage forecasts in line with the budgets, through margin improvements and outlet payroll, productivity, and controls.
- Have the ability to use your awareness of market trends to implement new initiatives and to present new concepts directions and undertake project management on behalf of the general manager.
- Driving forward the Food & Beverage profile for the hotel – working closely with the Director of Sales and Marketing to develop tactical profitable promotional activities on a regular basis.
- You will provide leadership, guidance, and supervision to all Heads of Department focusing on ensuring all service standards are achieved and followed delivering in the moment coaching to the team as well as regular individual and group training, conducting performance reviews and regular check ins with the team.
- You have excellent organisational and time management skills with an eye for detail and the ability to use your own initiative.
Key Requirements:
- An extensive career in food and beverage management, including a proven track record of managing F&B operations within prestigious 5* luxury hotels.
- Financial acumen, attuned to optimising revenue and cost control with precision.
- Commanding leadership, communication, and interpersonal acumen, inspiring and invigorating the team.
- Exemplary creativity and innovation, crafting visionary dining experiences and captivating promotions.
- A deep understanding of global food and beverage trends.
- Experience and understanding of rural 5* properties and the complexities that can be attached.
- Must hold WSET level 2 minimum – wine knowledge is essential.
